Hey guys, I've done everything I know to do to fix this issue so I'm coming to the pros.

I have a Samsung Blu Ray player attached to my Denon AVR 1708 receiver. I've been watching and listening to this setup without any issues until just last night for some reason it was only outputting in stereo. It plays in dolby surround when watching tv, but I simply cannot get the blu ray to play in 5.1. I've checked the blu ray player output and it is correctly set up. I've gone through every single setting I can think of and still can't figure it out. If you guys have any obvious or not so obvious settings I can check I'd sincerely appreciate it.

The most common cause of this problem is a receiver setting that passes audio to the TV speakers over HDMI. That forces all HDMI source devices to put out only stereo sound, no matter what you specify in their setup menus.

Do you have anything else HDMI that is running 5.1 sound, if so leave your receiver on whatever channel it is and move the cable into your blu-ray player and use that output and check the sound. Have you tried an optical cable just to test as well?

the Denon 1708 doesn't do HDMI audio, just video switching. He must have it connected via optical or digital coax.

Correct, I have the Blu Ray Player connected through optical. Also I am not aware of any setting that might be passsing audio to the tv speakers. All of my audio gear is going straight through my reciever with no connections to the televesion other than the HDMI cable which only transfers video.

If I'm not mistaken, an optical cable carries 5.1 signals. Check if your blu-ray player supports 5.1 output through optical. This must be given in your user manual.

I've found the answer and the answer is.....I'm an idiot. I had the blu ray player set up to output PCM instead of Bitstream. Fixed that and voila. Thanks for the ideas though guys

Ah, yes... Optical only allows stereo PCM.
